A thin layer of icing done with natural flavourings of lemon, clementine, raspberry, chocolate or pistachio is delicately spread over the dough of calisson – a mixture of candied fruits and almonds, produced following the rules of the art according to a recipe from Provence.
Ingredients:
melons confits (melon, sucre), amandes, sucre cristal, sucre inverti, oranges confites (orange, sucre), sirop de glucose, pain azyme (fécule de pomme de terre, eau, huile végétale) sucre glace, blanc d’œuf, cacao. Arôme naturel : citron, clémentine, pistache, framboise. Colorant d’origine naturelle : lutéine, caroténoïde, chlorophilline, betterave rouge. Traces possibles de noisettes.
