In this chessboard pattern delicacy, the white calisson is produced according to a recipe from Provence : a dough made with melon, candied citrus fruits and crushed almonds, finely glazed on top. The choco calisson only adds to this same dough a touch of cocoa in the glaze.

Ingredients:

melons confits (melon, sucre), amandes, sucre cristal, sucre inverti, oranges confites (orange, sucre), sirop de glucose, pain azyme (fécule de pomme de terre, eau, huile végétale). Glaçage : sucre glace, blanc d’œuf / cacao poudre. Traces possibles de noisettes.
