The homemade manufacturing of marshmallow

Forget the preconceived idea of marshmallow with a chemical taste and elastic consistency.

To make a good marshmallow, whisk first the egg whites to form stiff peaks.

Then incorporate the sugar syrup and the gelling agent, followed by the natural flavourings and colourings. In a fourth step, the dough is molded. Finally, let stand 24 hours before cutting.
