The homemade manufacturing of nougat

The manufacturing of nougat maintains the mystery.

How can such a seemingly simple product have so different tastes and textures? For almost 200 years, the nougat Arnaud Soubeyran has maintained the homemade manufacturing of nougat, cooked in a boiling water bath in copper cauldrons.

This method is the only one that allows a progressive evaporation of moisture while preserving the aromas of honey.

Raw materials are carefully selected. Lavender honey from our beautiful region is preferred for its floral and powerful flavour. The almonds bathed by the sun of the Mediterranean basin are roasted to strengthen their flavours.
